Intern, Royal Swaziland Sugar Cooperation

So far my main responsibilities have been focused on fermentation (converting sugar to alcohol). I have been doing two main tasks: diluting the molasses with water and then adding yeast & diammonium phosphate. My other colleagues have been performing the follow up fermentation for at least 40 hours to produce 11% beer and the beer is then evaporated. For the next day I will be exploring different yeast species that may increase the yield and help reduce waste.
